Ingredients

Ingredients pizza crust

  • 800-900 grams cauliflower florets
  • 1 egg - beaten
  • 40 grams soft goat cheese
  • 1 tsp dried oregano
  • pinch salt

Ingredients toppings

  • 3 tbsp tomato passata
  • Vegetables of your choice sliced - (mushrooms, bell pepper, onions, olives, zucchini, spinach, etc.)
  • 50 grams grated cheese of your choice

Instructions

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Cook or steam the cauliflower florets until al dente (this is the case if you can pierce it with a fork). Pour the cauliflower florets into a colander and let it evaporate for 5 minutes.
  • Place the cauliflower florets in a food processor and chop the florets to a rice-like texture.
  • Put the cauliflower in a clean tea towel and try to rinse/squeeze all the moisture out as much as possible. This is very important!
  • In a large bowl, combine the cauliflower, egg, goat cheese and herbs. (Don't be afraid to use your hands. You want it to be very well mixed.)
  • Roll out the dough ball between two leaves of baking paper to a thickness of about 1.0 cm (half an inch).
  • Bake the pizza crust in the oven for about 30 minutes. Then turn the bottom over and bake for about 10 minutes.
  • Let the pizza cool for 5 minutes. Garnish the pizza with 3 tablespoons of passata and the sliced ​​vegetables of your choice. Finally add the cheese of your choice on top.
  • Bake the pizza again in the oven for 10 to 15 minutes.
