Ingredients

Bottom layer

  • 25 gram coconut flour
  • 50 gram erythritol powder
  • 1 tsp baking powder
  • 0.5 tsp vanilla extract
  • 100 gram butter - room temperature
  • 2 large eggs - room temperature

Top layer

  • 100 gram butter - room temperature
  • 225 gram cream cheese - room temperature
  • 50 gram erythritol powder
  • 0.5 tsp vanilla extract
  • 50 drops liquid stevia
  • 2 large egg - room temperature

Instructions

  • Preheat the oven to 175 degrees Celsius / 350 degrees Fahrenheit.
  • Grease an 8 inch / 20 cm spring form pan with some butter.
  • Add the butter, eggs and vanilla extract for the bottom layer to a bowl and mix together. Then mix in the other (dry) ingredients of the bottom layer. Set aside.
  • Mix the butter and cream cheese of the top layer in another bowl. Then add the other ingredients (it is best to use a hand mixer).
  • First press the bottom layer into the spring form like a crust. Then pour the top layer over it.
  • Bake for 30 to 35 minutes (until the edges are starting to get brown).
  • Let it cool in the springform for at least 15 minutes and cut it into 10 pieces.

The breadcrumbs suddenly make the meatball way more unhealthy.Fortunately, you can also make delicious meatballs without breadcrumbs. In this easy recipe you will learn how to make my low-carb meatballs in the oven.Making a tasty meatball meal is actually not difficult.

You just need to mix some meat, spices and ‘a binder’.

But preparing the meatballs is another branch of sport. If you roast meatballs alone, chances are they will dry out.Fortunately, there are a number of culinary tricks you can apply to keep meatballs from drying out:

  • Basting: this is the technique where you constantly scoop hot fat and the juices – with a spoon – over the meat. These hot juices will cook the piece of meat or meatball inside.
  • Frying sauce combination: this technique is especially useful for meatballs in tomato sauce. First you briefly fry the meatballs in a pan. Then continue cooking them in the tomato or pasta sauce you have made.
  • Roasting oven combination: with this technique you first roast the meat in a pan and then finish it in the oven.

Do you want the easiest or the tastiest meatballs?

The easiest way to make these low-carb meatballs is to follow the recipe below.But making the tastiest meatballs takes a little more effort. You do this by first frying them on all sides for 5 minutes and then putting them in the oven for about 10 minutes.Roasting the low-carb meatballs causes the meat to caramelize. This makes the meatballs tastier.By putting them in the oven, you ensure that the meatballs are cooked without drying out.Roasting in the pan also ensures that the ‘juices’ of the meatballs remain inside, so that they do not dry out.

In this recipe we use an egg to keep the meatball together instead of the breadcrumbs.But since these low-carb meatballs are made in a casserole, you basically don’t need to use an egg if you really wouldn’t want to.But we recommend it because you prevent the meatball from falling apart for any reason.Are you ready to make this recipe? Ingredients

  • 250 gram ground beef
  • 250 gram ground pork or turkey
  • 25 gram grated Parmesan cheese
  • 1 egg
  • 2 tbsp fresh parsley - chopped
  • 25 gram onion
  • 1 clove of garlic
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Optional

  • 500 gram tomato passata

Instructions

  • Preheat the oven to 200 degrees Celsius.
  • Add the ground beef and ground pork/turkey in a bowl and mix together.
  • Add the remaining ingredients to the ground meat and mix well with your hands.
  • Wet your hands with water or olive oil and roll 6 meatballs.
  • Briefly heat the tomato passata in a pan and season with salt and peper. Then, pour over the meatballs. Garnish with some grated cheese.
  • Place the meatballs on a baking dish and bake for 15 to 20 minutes in the oven.

Notes

Each serving consists of 3 meatballs.

  • 0.5 cauliflower - cut into small florets
  • 50 gram carrots - chopped
  • 75 gram pickles - chopped into cubes
  • 5 large eggs - hard-boiled in chopped into cubes
  • 115 gram bacon - sliced into cubes
  • 100 gram peas
  • 170 gram mayonnaise
  • 0,5 tbsp Dijon mustard
  • 0,5 tsp salt
  • 0,5 tsp pepper

Instructions

  • Fill a saucepan with water and add a tablespoon of salt. Bring the water to a boil and add the small cauliflower florets and the carrots. Cook for 5 minutes. Then drain them well.
  • Mix the mayonnaise, Dijon mustard, salt and pepper together in a bowl.
  • Mix the cooked cauliflower, carrots, pickles, eggs, bacon and peas in a large bowl. Then stir the mayonaise dressing into the bowl with the vegetables.
  • Cover the salad and refrigerate for at least an hour. The salad remains good for a night, or even a few days.

  • 2 tbsp olive oil
  • 4 cloves of garlic - minced
  • 500 ml chicken stock
  • 1 tbsp Provencal herbs
  • 0,5 tsp salt
  • 0.25 tsp pepper
  • 60 ml heavy cream
  • 30 gram Fresh basil - sliced

Instructions

  • Preheat the oven to 200 degrees Celsius (390 Fahrenheit).
  • Mix the tomatoes, garlic and olive oil in a bowl. Then spread them over a baking tray and bake for 20-25 minutes.
  • Put the tomatoes in a saucepan and puree with a hand blender. Cook over medium heat and add the chicken stock, Provencal herbs, salt and pepper and let it simmer for 10-15 minutes.
  • Add the fresh cream and basil and let it simmer for another 2 minutes.
